Southern Pulled Pork
this is a big hit in our house, I fell in love with pulled pork when I was at school in Virginia (where I learned that BBQ could be both a noun and a verb), and now the whole family loves it
Pulled pork recipe
Serves 8-10
Ingredients
One pork shoulder or butt (2 1/2 to 3 pounds), trimmed of excess fat
Marinade
1 cup ketchup
1 cup sweet apple cider
1/2 cup water
3 tablespoons Worcestershire sauce
1/3 cup brown sugar
2 tablespoons smoked paprika
2 tablespoons chili powder (or chipotle chii powder)
2 tablespoons minced garlic
1 tablespoon ground black pepper
1 teaspoon hot pepper flakes
How to
Put pork in the slow cooker. In a large bowl, combine all marinade ingredients. Pour over pork, rubbing in. Cover and cook on low for eight hours. If using a Dutch oven, cook at 275°F for six hours.
When done, the meet will shred easily when scraped with a fork.
Serve with warm buns, coleslaw or salad and your favorite fixings (caramelized onions are a fave at our place)
After the pork is shredded you may need to add more ingredients, depending on your taste. If it needs sweetening, add a couple tablespoons brown sugar. If too sweet add more Worcestershire sauce and lemon juice. If you want a heavier barbeque flavour, add more chili powder. You will probably end up adding more ketchup too.
