Goat Cheese & Roasted Red Pepper Meatloaf

 Ingredients

1/3 cup seasoned dry breadcrumbs
1-1/2 teaspoons minced garlic
1 egg
3 tablespoons finely chopped green onion
3 tablespoons barbeque sauce
4 ounces roasted red peppers, thinly sliced
1 ounce goat cheese
1/4 cup chopped green onions
1/4 cup barbeque sauce

 

How to

Preheat oven to 350°F. Spray eight 9 x 5” loaf pan with cooking spray
.
In a bowl, combine ground beef, bread crumbs, garlic, eggs, 3 tablespoons of green onions, and the 3 tablespoons of barbeque sauce until well mixed

Lay a 12 inch piece of wax paper on worksurface. Spread meat mixture into a rectangle
.
Lay roasted red pepper strips crosswise on top, distributing them evenly. Spread goat cheese evenly. Sprinkle with a quarter cup of green onions. Using the wax paper to help you, tightly roll up into a log. Spread out wax paper and invert prepared pan over the meatloaf with hand under wax paper turn over gently so the meatloaf falls into your pan.

Bake, uncovered, for 45 minutes or until cooked through. Let’s stand for 10 minutes. Invert and slice.
