Pan Seared Salmon with Zucchini, Basil & Cherry Tomatoes


  • 2 salmon filets
  • 1 zucchini, julienned
  • 4 green onions, finely chopped
  • 1 garlic clove, minced
  •  handful of cherry tomatoes, cut in half
  •  handful of torn basil

How to:

  1. Heat olive oil in a large fry pan over medium temperature and saute the green onion and garlic for a few minutes
  2. Mix in the zucchini, basil, chilli and cherry tomatoes and cook for 5-7 minutes, stirring occasionally
  3. In a separate fry pan over medium heat cook the salmon for 2-3 minutes on each side, squeeze lemon juice over
  4. Plate the veggies and salmon, season with Himalayan salt and pepper
